Ingredients

8 lamb chops
2 tbsp olive oil
3 garlic cloves, crushed
2 tsp chopped rosemary
1 tsp lemon zest
1 tbsp lemon juice
1 tsp salt
½ tsp black pepper

Method

Mix oil, garlic, rosemary, lemon, salt, and pepper.
Coat chops and rest 30 minutes at cool room temperature or refrigerated.
Grill or pan-sear over medium-high heat 3–5 minutes per side until browned and cooked to preference.
Rest 3 minutes and serve.

Food safety

Cook lamb chops until the juices run with only a blush of pink if you prefer medium, or fully browned for well done. Keep raw meat separate from salads.
