Ingredients: 600–700 g steak; 2 tbsp soy sauce; 1 tbsp olive oil; 1 tbsp Worcestershire sauce (or extra soy); 2 garlic cloves, crushed; 1 tsp cracked black pepper; 1 tsp brown sugar

A balanced soy–garlic–pepper marinade that seasons steak without turning it mushy.

Marinade

2 tbsp soy sauce
1 tbsp olive oil
1 tbsp Worcestershire sauce (or extra soy)
2 garlic cloves, crushed
1 tsp cracked black pepper
1 tsp brown sugar

Ingredients

Method

Combine marinade ingredients.
Coat steaks and refrigerate 30–90 minutes (not overnight for this mix).
Pat dry, then grill or pan-sear to preferred doneness.
Rest 5 minutes before serving.
