Garlic butter steak

Ingredients

• 2 steaks (about 250–300 g each), room temperature for 20 minutes
• 1 tbsp neutral oil
• Salt and black pepper
• 40 g unsalted butter
• 2 garlic cloves, smashed
• 2 thyme sprigs (optional)

Method

1. Pat steaks dry and season generously with salt and pepper.
2. Heat a heavy pan until very hot. Add oil, then steaks.
3. Sear 2–4 minutes per side depending on thickness and preferred doneness.
4. In the last minute, add butter, garlic, and thyme; spoon foaming butter over the steaks.
5. Rest on a warm plate 5 minutes before slicing.

Tips

• Resting keeps juices in the meat.
• For thicker steaks, finish briefly in a 180°C oven after searing.

Food safety

Whole-muscle steaks are often served at preferred doneness; mince and poultry need thorough cooking. Use a clean thermometer if unsure.
